Commercial Baking Trays That Resist Warping
In a commercial bakery, standard domestic trays quickly warp, buckle, and fail under constant high-heat exposure.
Thermal Stability: We stock heavy-duty commercial baking sheets and pans engineered to guarantee structural integrity. Our Mondo Pro Series bakeware is manufactured from anodised 3003 aluminium alloy, with most commercial-grade pans carrying a 25-year guarantee against warping or blistering. We also supply Nordicware Naturals (made from natural aluminium with reinforced steel rims) and French-made Guery industrial-strength blue steel pans to withstand extreme oven temperatures.
Even Heat Distribution: These professional pans ensure perfectly even heat distribution, preventing hot-spots and ensuring a consistent golden-brown finish across high-volume roasting and sheet baking.
To streamline turnaround times and reduce consumable costs like baking paper, high-volume bakeries require reliable release surfaces.
Heavy-Duty Non-Stick Pans: For everyday production, we highly recommend our Bakemaster range of non-stick bakeware. Constructed from heavy-duty carbon steel, these pans feature the Quantum 2 non-stick coating system—a ceramic-reinforced silicone coating that delivers exceptional durability and release.
Specialised Silicone: While our non-stick pans are the ultimate workhorses, we also stock specialised silicone baking moulds and mats. These are the ideal choice for delicate or highly specific baking applications, such as producing macarons.

Precision Pastry Tools & Decorating Equipment
High-end patisserie and cake decorating require meticulous precision and the right hand tools. For professional cake decorating, brands like Mondo are highly favoured due to their straight-walled pans and non-reactive surfaces.
Precision Control: We supply professional piping and cake decorating kits, alongside exact-measurement cutters and durable pastry brushes, designed for intricate pastry work.
Volume Efficiency: Whether you are sheeting dough with our commercial rolling pins or batch-cutting, our tools—including our practical, professional-grade Chef Inox range—are ergonomically designed to reduce fatigue during long prep shifts.

frequently asked questions
What size baking trays fit a commercial oven?
Commercial ovens in Australia run on several different tray systems, so the answer depends on your oven. Bakery deck and rack ovens usually take the Euro tray at 600 x 400mm. Combi ovens work to gastronorm instead, a standard sizing system where the full-size GN 1/1 tray is 530 x 325mm and every other size is a fraction of it.
Measure your oven runners before ordering, because a tray 10mm too wide will not go in and a tray too small wastes a third of your oven floor.
Bring the measurements into the Richmond showroom and we will match trays to your oven rather than guessing at it.
Where can I buy commercial bakeware in Melbourne?
How do you stop non-stick bakeware from failing?
Non-stick coatings fail for three reasons: metal tools scraping the surface, aggressive dishwasher detergent, and thermal shock from putting a hot pan under cold water. Use silicone or nylon tools, wash by hand where practical, and let pans cool before they go near the sink.
The Quantum 2 ceramic-reinforced coating on our Bakemaster range stands up considerably better than standard non-stick, but no coating survives a wire scourer.
Treated properly, a commercial non-stick pan gives you years rather than months.
